Dates & Nuts Energy Flowers and Swirls

WP_20150216_029As I mentioned on My Diet page, I love making snacks with dried fruits and nuts. Recently I bought a flower shaped chocolate mould as it looked so pretty. So I attempted to make energy flowers instead of energy balls. They look absolutely pretty!


A (top);

3/4 cup chopped dates

1/4cup your choice of nuts (I used almonds)

2 tbsp unsweetened coco powder

B (bottom);

3/4 cup your choice of nuts (I used almonds, peanuts and Brazils)

1/4 cup sesame seeds

1 tsp coconut oil

Dessicated coconut

Pistachio nuts

Poppy seeds


WP_20150212_0061. Basically you want the same amount of mixture A and B. Once you blend each mixture until smooth, sprinkle your topping on the bottom of your mould.

2. Fill your mould halfway with mixture A and press it quite neatly. This is important to get a beautiful shape when you take it out from the mould later on. In the same way fill mixture B up to the top and press again. With a knife, scrape the excess mixture at the top and make the surface as flat as possible.

3. Put the mixture filled mould in the freezer for about 30 minutes. Take the flowers out and enjoy! Keep the rest in the fridge.

As in the pictures, spread mixture A on a clingfilm and then mixture B on top.

From the bottom roll the mixture up. Chill in the freezer for about 30 minutes before slicing.
