Time of apples. So many apples everywhere, when I go for a walk in the village, from the car, all I notice is apples. haha 😉
This is probably the best time of the year that makes me happy with abundance of food from nature. Well maybe not, I love other seasons, too.
No need for fancy ingredients, these delicious apples make me happy. They are gifts from nature 🙂
I was given a load of apples by our neighbour. Thank you very much Paul! So I decided to do something with them, eating fresh is my favourite way but it isn’t gonna catch up. Also I’ve got to take advantage of this abundant apples for my cooking.
This granola is not sweet. I only added a tablespoon of sweetener. In fact, I didn’t want anything sweet. If you fancy sweet granola then please add more sweetener. Apple pieces go chewy after cooking, which add a character to this recipe.
I will sprinkle this on my banana ice cream..Yum!
210g apples, cut into small pieces, like the size of raisins (keep the skin on unless it’s got blemish)
300g rolled oats
30g pumpkin seeds
2 tbsp cinnamon
1 tbsp or more of agave syrup or a sweetener of your choice
2 tbsp sunflower oil
pinch of salt
1. Preheat the oven to 175C.
2. Put all the ingredients in a baking tray, and mix thoroughly so that everything distributes evenly.
3. Bake until golden and completely dry. I made this just before bed so I switched off the oven when granola was still slightly moist, and left the tray in the oven overnight. It was perfect in the morning. You just need to keep checking. 🙂
