I Love Beetroot Not Cheese Cake

Today I am sharing a recipe of the dessert I made for Valentine’s day.

It’s so easy, quick and delicious. Most of all, I love the colour of beetroot.

For the acidity I only used some orange flesh, but I think it will be nice if you add a touch of vinegar or lemon juice, too. You know that you can always taste and create your own version, don’t you?

Ingredients (serves 1 to 2):

30g cashew nuts, soaked for at least 4 hours (=42g when drained)

7g beetroot

1 tsp agave syrup

1 tsp coconut oil, melted

10g flesh of an orange

5g coconut butter

50g combination of almond milk and water (I used 10g milk and 40g water)

Hazelnut and desiccated coconut for topping (optional)

Method:

Blend all the ingredients apart from the ones for topping. Pour the mixture into small containers or jars and decorate with the topping. Leave them in the fridge to set.
